Add the cleaned bean sprouts, red chili shreds, salt, white sugar and soy sauce. Turn off the heat, remove the cooked Stir-fried Bean Sprouts with Dried Tofu from the wok and serve on a fine porcelain plate. Return tofu to the wok along with scallion greens, cilantro and cornstarch slurry. I do use some oil to fry up the tofu which I know some people might not be down with and I get it, I used to feel the same way - that oil was the enemy.
