- You need 1 cup of Ingredie brown basmati rice.
- Prepare 1/2 tsp of oil.
- Prepare 1/2 tsp of salt.
- You need 5 cups of water.
- Prepare of Ingredients for the Pulao.
- Prepare 2 tbsp of ghee.
- It's 1 of bayleaf.
- It's 1 of " stick cinnamon.
- Prepare 3 pods of green cardamom.
- You need 1 of star anise.
- It's 1/2 tsp of fennel/ sauf seeds.
- You need 1 tsp of jeera.
- Prepare 1 of onion, finely chopped.
- It's 1/4 cup of curds.
- Prepare 200 gms of paneer cubes, browned in 1 tsp ghee.
- You need 1 tsp of ginger - garlic paste.
- You need 2 of green chillies, slit.
- You need 1/4 tsp of Turmeric powder (haldi).
- It's 1 of tomato, finely chopped.
- Prepare 1/2 tsp of Kashmiri red chilli powder.
- It's 1 tsp of Shahi biryani masala.
- You need 1 tsp of salt.
- Prepare 2 tbsp of mint, finely chopped.
- Prepare 2 tbsp of coriander, finely chopped.
- Prepare 1 tbsp of finely chopping coriander leaves for garnishing.
Healthy Brown Rice Paneer Pulao by Brinda Gandhi, Dietician step by step
- For cooking the Brown Rice Heat 5 cups of water in a vessel, once the water comes to boil, add the salt, oil and soaked brown rice and cook them on medium flame till 90% cooked for 10-12 minutes. Remove the cooked rice from water and keep aside.Tip : Make sure you do not overcook the rice.
- How to proceed Heat ghee in a non stick pan and add the whole spices, saute for 2 minutes on medium flame.
- Add the chopped onions, ginger-garlic paste, green chillies & saute till they onions turn translucent..
- Add the chopped tomato & saute till the tomatoes turns soft & mushy Add the turmeric powder, chilli powder, biryani masala and salt. Mix well and cook on slow flame for 2 minutes..
- Add 1/4 cup water & let the spices cook. Add whisked curds and saute till the curds combines well in the mixture..
- Add mint leaves, coriander leaves, browned paneer and mix well..
- Spread the cooked rice evenly on top of the gravy, cover & let it simmer for 5 minutes on slow flame so that the ricr will soak in all the flavours. Serve hot with mixed vegetable raita..
