  1. You need 2 cup of brown rice.
  2. It's 4 of fresh tomatoes diced.
  3. You need 3 of fresh pepper diced.
  4. You need 2 stick of carrot diced in tiny strand.
  5. It's 1/2 of bulb onion dice.
  6. It's 1 handful of green pea.
  7. You need 1 tbsp of olive oil.
  8. You need 1 of stock cube.
  9. It's of grilled chicken to serve.

Healthy Meal: Brown Rice & Tomatoes Sauce instructions

  1. Wash brown rice and parboil for about 15mins, rinse and parboil again with little water and a pinch of salt, turn off heat once rice is tender and dried up.
  2. Heat up frying pan, add olive oil once its hot, add diced onions, garlic and ginger, stir for about a minute.
  3. Add tomatoes and pepper stir, add salt and stock cube, stir continuously for about 4 mins; finally add carrot and green pea; stir and turn off heat after 3mins.
  4. Serve with brown rice.
