Vickys Gluten-Free Flour Blends, All In One Place! step by step

  1. I use different gluten-free mixes for different bakes. Some recipes work best with a lighter flour, some things need a heavier blend. I thought it would be handy if I attached all of my mixes here so they're all available in one 'recipe'. I've included my tips and conversions links as well as a basic bread and pastry recipe https://cookpad.com/us/recipes/333165-vickys-gluten-allergy-free-flour-cake-flour-mix https://cookpad.com/us/recipes/337958-vickys-gluten-free-all-purpose-flour-mix-2-gf-df-ef-sf-nf https://cookpad.com/us/recipes/338081-vickys-gluten-free-flour-mix-3-breads-muffins-cookie-bars https://cookpad.com/us/recipes/338049-vickys-gluten-free-flour-mix-4-cakes-cookies https://cookpad.com/us/recipes/338133-vickys-gluten-free-baking-powder https://cookpad.com/us/recipes/338157-vickys-best-egg-replacer-powder-for-gluten-free-vegan-baking https://cookpad.com/us/recipes/337859-vickys-gluten-free-brown-bread-flour-mix https://cookpad.com/us/recipes/338020-vickys-quick-white-oven-bread-with-variations-gf-df-ef-sf-nf https://cookpad.com/us/recipes/365564-vickys-homemade-box-cake-mix-gluten-dairy-egg-soy-free https://cookpad.com/us/recipes/335076-vickys-bisquick-mix-with-gluten-free-version-dairy-egg-soy-free https://cookpad.com/us/recipes/356517-vickys-puff-pastry-gluten-dairy-egg-soy-nut-free https://cookpad.com/us/recipes/332957-vickys-sweet-savoury-shortcrust-pastry-gf-df-ef-sf-nf https://cookpad.com/us/recipes/362279-vickys-conversions-for-gluten-free-flours-cups-to-grams https://cookpad.com/us/recipes/360554-vickys-gluten-free-baking-tips.
  2. A lot of my recipes have the flour mix ingredient break down listed in them but in my more recent recipes I just refer to 'gluten-free flour'. I use either of my 4 numbered mixes attached above, depending on the recipe. Those are titled for specific bakes ie cakes, breads etc.
  3. I favour a blend of 60% starch to 40% flour as a standard, all-purpose mix so if I don't have a blend already made up, I simply calculate the amount of flour needed for the recipe, divide it by 10 then multiply that number by 60 for my amount of starch in grams, then by 40 for the amount of flour in grams.
  4. Please look through my recipes in my profile for other gluten-free basics such as pancakes, bagels, cakes, cookies and also everyday breakfasts, dinners and desserts.
